How To Preserve Garlic: Freezing, Drying and Oils

If you love to cook with garlic, then it would be very beneficial to learn how to freeze garlic
 
You can save lots of money when you buy in bulk and freeze garlic for later use.  You also save a ton of time by not having to peel, chop, mince, etc, everytime you need garlic for a recipe. 
 
Having garlic waiting in the freezer also makes it quick and easy to make your own garlic bread very quickly!  Any of the garlic recipes below can be frozen for several months. 
 
With each medium clove of garlic you process, you should get:
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon garlic oil
  • 1/2 teaspoon garlic salt

How to Freeze Garlic in Cloves

  • Clean garlic well
  • Remove each clove from the head of garlic
  • Place in zip lock bag
  • Pour enough extra virgin olive oil on the cloves to give them a thin layer
  • Shake the bag to make sure all cloves are covered.
  • Freeze bag promptly

How to Make Minced Garlic

  • Peel the garlic cloves
  • Puree them in a blender or food processor with 1 part oil and two parts garlic
  • Store in a freezer bowl that has a lid that seals tightly
  • When ready to use, measure out what you need and put the rest back in the freezer.

How to Make Garlic Powder

  • Peel the garlic, making sure to discard any bruised or damaged cloves
  • Cut the cloves in half lengthwise
  • Place them in an electric food dehydrator
  • Follow the manufacturer’s instructions for drying
  • Place in chopper or food processor and grind to a powder

If you do not have a food dehydrator

  • Stretch cheesecloth over oven racks and secire with toothpicks
  • Place the garlic on the racks and turn the oven to 140 degrees for two hours
  • Lower to 130 degrees until the garlic is completely dry and crisp

How to Make Garlic Oil

  • Add dehydrated garlic to olive oil in a wide mouth jar
  • Screw on the lid and place the jar in the refrigerator
  • Store in refrigerator for 30 days or Freezer for several months

How to Make Garlic Salt

  • Place dried garlic in a blender and process it until it turns to powder
  • Add four parts sea salt for each one part garlic powder
  • Process for just a second or two to combine the two ingredients
  • Store the garlic salt in an airtight glass jar
